This workshop has its emphasis on "work" and is the epitome of "dirt-time". You'll get to learn and practice firsthand all of the skills and techniques you we teach you during class sessions.
Come study Permaculture with Kris Holstrom, owner of Tomten Farm and the art of gourmet raw food with Gabriela Ranzi.
We'll cover the basics of raw foods and permaculture gardening through daily instruction and interactive hands-on experiences. Come prepared to get your hands dirty and your bodies nourished.
You'll experience why a raw food diet can aid the body in healing on a cellular level, as well as how to prepare delicious, nutritious and easy recipes. Learn why enzymes are so important, how to get your protein needs through plants, how to make your own ferments such as kimchi, sauerkraut and kombucha, and how to maintain a raw foods lifestyle.
You will also learn how to support the body through food combining, alkaline/acid balance, intuitive eating as well as which foods are the most healing.
Permaculture education will bring us full-circle in caring for our mind, body, spirit and the earth. The principles of permaculture are in complete alignment with the raw foods lifestyle and demonstrate the connection between our personal body and the earth body.
We will discuss and put into action beginning permaculture practices for the season ahead. Activities may include creating a composting station for building soil, looking at the topography of the landscape and defining swale lines for maximizing water absorption in the ground and putting together layer mulching for rich organic planting beds.
The focus on food and permaculture will be coupled with daily yoga, meditation and movement classes that will support the full integration of this program. Massage by appointment will be offered as well.
Kris has a background in Forestry (BS Utah State Unversity) and Horticulture (MS Virginia Tech), Permaculture was a natural extension of her interests and passions. Her current day job is as Sustainability Coordinator for San Miguel County, Colorado through a non-profit called EcoAction Partners.
She took her PDC from Jerome Osentowski back in 1989. It brought so many thoughts and ideas together for her. She had just started our off-grid, organic farm at 9000' near Telluride, Colorado and the course jump started Tomten Farm. Since then She's taught a few sessions in Jerome's courses, and four years ago began teaching a full PDC with Robyn Wilson, Daniel Aragon, Pat Frazier and Wind Clearwater.

Gabriela Ranzi is a Raw food chef, Forager and Health Coach based in Durango CO. She works at the environmental non-profit organization Turtle Lake Refuge and spends a lot of her time preparing delicious and nutritious raw food recipes for the café and for her local community.
Gabriela is the daughter of Karen Ranzi, author of “Creating Healthy Children” and “Raw Food Fun for Families” and has led/catered several raw foods and yoga retreats.
She loves to teach and share her knowledge of living, wild foods with those who are eager to improve their health, knowledge and connection to the earth.
